This organic Gesha lot from Guardian del Bosque defies the expectation that dry processing "hides" the cultivar. While many natural Geshas are dominated by ferment, producer Ronal Carranza Montenegro has achieved a rare equilibrium: the heavy-handed fruit sweetness of a 120-hour anaerobic fermentation balanced against the crystalline floral aromatics that define the Gesha variety. Grown at 1600 meters in the Amazonas region of Peru, this coffee benefits from the shade of the "Guardian of the Forest" farm, resulting in a dense, syrup-like body and a vibrant, evolving profile.

In the cup, the experience is immediate and intense. The aroma leads with heady notes of freesia and cherry blossom, underscored by a rustic, resiny sweetness. On the first sip, expect a rush of fruit syrup and dried strawberry, which transitions into a tropical complexity reminiscent of creamy mangosteen. As it cools, the coffee reveals its playful sideβ€”a unique grain-like sweetness and fruit-forward acidity that evokes memories of Fruit Loops cereal. The finish is long and fragrant, leaving behind a delicate lingering of fresh hops and wild honey.

We have applied a light roast to bridge the gap between the coffee's wild fruit characteristics and its delicate floral origins. This roast ensures the deep, jammy sugars are fully developed while preserving the ethereal jasmine-like finish.
