Banko Gotiti sits between 1,950 and 2,200 meters in the hills of Yirga Cheffe — high enough that the cherries ripen slowly and the sugars have time to concentrate. The mill buys from roughly 320 smallholder farmers, most working two hectares or less. The wet-process coffee is turned by hand, and defects are culled one bean at a time before it ever reaches the drying beds. That care is why this lot cups at 93.5 — a score I have seen on very few washed Ethiopians.

In the cup it opens with jasmine in full bloom; the aromatics arrive before the coffee does. The body is clean and transparent — closer to a fine tea than to a heavy breakfast cup — with a sweetness that reads as agave and golden plum. As it cools the tropical side steps forward: guava, mango, honeydew, a flash of pineapple candy, finishing on lemonade and rose water.

I roast this to City+ — light enough to keep the florals intact, developed enough that the sugars aren't green. Same philosophy as the Gesha: get out of the coffee's way.
